Job Responsibilities:
  • Food production to achieve highest possible food quality, whilst reducing food cost
  • Assisting the Executive Chef to maintain high standard of food quality, hygiene and safety
  • Maintaining sufficient stocks in the stores and ensuring the quality standards of all food items purchased by at all times
  • Identifying the health hazards in the kitchen to be reported to the Executive Chef and ensuring cleanliness and hygiene levels of all Kitchen areas
  • Assisting in controlling and minimizing food wastage and ensuring that costs are maintained as per the budget and monitoring staff adherence to proper food handling methods
  • Ensuring guest satisfaction by handling guest complains & special requests while adhering to the brand standards
  • Assisting in menu planning and employee training and development
Key Competencies Required:
  • Possess a Diploma/ Certificate in Cookery from a recognized Hotel School with 2 years executive level experience in a 5-star Hotel or possess a minimum of 5 years of experience in F&B Preparation in which a minimum of 2 years of experience in a similar capacity.

Assistant Chief Steward

Job Responsibilities:
  • Managing the Kitchen Stewarding operation and inventory control
  • Ensuring that specified hygienic, health and safety standards are maintained
  • Ensuring that the kitchen equipment inventories are in order and required maintenance is undertaken in a timely manner
  • Ensuring the maintenance and cleanliness of equipment/ utensils/ surfaces
  • Ensuring timely and accurate placing of chemical orders

  • Wastage and breakage control
Key Competencies Required:
  • Possess G.C.E Ordinary Level with at least 7 years’ experience in the Stewarding department which includes a minimum of three years’ experience at executive level at a similar star class hotel.
